Stuffed Portobello Mushrooms

These are a pretty classy appetizer I think and delicious too!

This is what you will need:




6-8 portobello mushrooms


1 red pepper diced

1 small purple onion diced

1 2 cloves of chopped garlic

1tbs of olive oil

A pinch of salt and pepper

1 cup of mozzarella shredded

1 diced avocado

Mix all ingredients except the mushrooms and avocado.

Wash the mushrooms and remove the centers.

Fry with mushrooms on both sides in olive oil for 2-3 minutes each side.

Lay the mushrooms on a paper towel to dry.

Scoop the mixture into the mushrooms except the avacado.

Broil in the oven until the cheese melts.

Top with avocado.

And serve!  NUMMY!!!!
