Cucumber-Dill Stuffed Cherry Tomatoes
I am SO ready for winter to be over!
At the end of summer your looking forward to a bit cooler weather, making warm home cooked meals such as casseroles, dishes in the crock-pot, hot apple pie and warm dips.
And at the end of Winter your wanting summer back and you start thinking of light meals and things I can make our of my garden.
Speaking of garden I am almost tripling that bad boy this year, I'm going to be a busy girl!!
This appetizer makes me think of summer!
Here is what you will need:
24 Cherry tomatoes
3 oz of softened cream cheese
2 Tablespoons of Mayonnaise
1/4 Cup finely chopped, seeded cucumber
1 Tablespoon finely chopped green onions
2 Teaspoons chopped fresh dill
How to make them:
Remove stems for tomatoes (if there are any, usually not)
Cut a thin slice from the bottom of each tomato
With a very small spoon or best yet ,use a melon baller, hollow out each tomato , leaving 1/8 inch shell.
Lay your tomatoes opening side down onto a paper towel to drain
In a small bowl, combine cream cheese and mayo, blend well.
Stir in cucumber, green onion and dill mix well
Fill tomato's with the cream cheese mixture,
Cover loosely and refrigerate for 2 hours
Enjoy!

The Bulldog
Hit the jackpot with this find!
The husband and I were looking for a new place to do lunch at this past Saturday when we were downtown St Paul and came across The Bulldog.
Like I said, Jackpot!!! We were really cold, it was so nice to sit in the sun by their front window's, warmed us up right away.
The waiter was super attentive, that's always a bonus :)
It was the brunch hour, but we decided to do lunch.
I went with the Philly Cheese Sandwich, AMAZING!!! I don't know what kind of cheese that was but I'll take a gallon please! The meat was perfect & so where the onions and green peppers.
Just talking about it, I'm craving it. Something I will want to eat again.
Hubbie ordered the Hawaiian Volcano, what you may wonder is on it?? Lots of good stuff!! Double smoked bacon, grilled pineapple,fresh sliced jalapenos, and smoked Gouda.
He really enjoyed that burger, and for once he did not wear it, he liked that it stayed together well.
We both had tater tots with our sandwiches, very good.
They have a HUGE array of beers here. It was a bit early in the day for us to be drinking, although I saw plenty of people enjoying their spirits :)
The Bulldog offers a flight of 5 beers for only $14!
They also have 2 other locations, both in Minneapolis. I am guessing their are doing pretty well for themselves.
It looks like a fun place to hang out at night have some beers play one of their dart machines or take a hand a the shuffleboard table.
They have week long specials, a nice selection on the menu and a good neighborhood feel.
We will be returning!
