Vegetable Pizza



Hello who doesn't remember this 1970's classic appetizer!?!
Didn't everyone make this??
My daughter was cruising Pintrest and sent this to me, asked if I could make this again, it's been years, I totally forgot about it.

Super easy to make and a great anytime appetizer, so colorful too!

What you will need is:
2 packages  croissant dough
2 8oz packs cream cheese, softened
1 cup mayonnaise
1 1 oz package dry Ranch dressing
4 cups of your favorite vegis chopped (I used broccoli, carrots, tomato's, green pepper and purple onion)
1 cup of shredded cheddar cheese

How to make this:
Start by pre heating your oven to 375 degrees
Roll out your croissant dough on to a cookie sheet, making sure the edges are pressed together and covering the cookie sheet
Follow baking directions on packaging (usually 11-13 minutes)
When the dough is done baking remove and let cool
While that is cooling mix together your cream cheese, mayo and Ranch
In another bowl mix your pre chopped vegetables of your choice with the shredded cheese
Spread evenly the cream cheese mixture on top of the croissant dough
And top with your vegi cheese mixture, press that into the cream cheese a bit
Now place in fridge and let chill for one hour
Cut into squares and serve

* Other vegetables you can use are sliced radishes, chopped cauliflower, green onions maybe sliced olives.  Let your imagination go wild!

Boneyard Uptown - UPDATE Now Closed

Welcome to the Twin Cities Boneyard located in Uptown, Minneapolis!
Lucky me got to try this place out Friday night, they just opened.
On the phone they said it will be an hour wait, we arrive and immediately got seated, Sweet!
The atmosphere was hopin!! I'm going to call this place Shabby Chic meets Industrial Southern.
The uniforms were fun, blue and while plaid shirts and jeans.
The menu was totally creative and the drinks too!
Now if you have read my restaurant reviews before you know that I am a beer girl.
But when I was reading the drink menu I was so temped to try one of their creative libations, I just had to.
I ordered the SANTA ANA, camarena infused with cilantro, all-spice, jalapeƱo, lime, gosling’s ginger beer only $6.95.   Boy did that warm me to the core!


I did notice that they had flights of beer in the bar, I will have to check that out next time we visit The Boneyard (oh you bet there is gonna be a next time!).
Hubbie ordered Crab Hush Puppies to start with, we didn't have to wait long at all for those to come out. Very good !  Warm and crunchy.  Nummmmmmm..........


For dinner I ordered the Fried Green Tomato Po'Boy that came with their seasoned chips/fris.  This was really good, it had some kick to it too.

(I would not suggest eating that pepper on top unless you can handle the heat!!- Oh boy, it's hot!!)

On to the Hubbie's meal choice, the server suggested he tried the Bacon Wrapped Duck Meatloaf and that is what he got.  Good choice too he loved it.  I swear every person that walked by our table were checking out what was on his plate. The meatloaf came with mashed potatoes and caramelized brussel sprouts.  



Oh I almost forgot we ordered the small side of the Mac and Cheese, made with Pimento Cheese.
SUPER DELISH!!!  



The patio looks like a good time, can't wait for that to open.  
They have valet parking too!
Can't wait to go back!

Pimento Cheese Spread

Pimento Cheese is a common food in the southern part of the United States, they use it as a spread or a relish.
You can hop this up by adding different cheeses that you may like or try adding a bit of hot sauce, Worcestershire sauce, chopped jalapenos, diced pickles or onions.
I made a pretty basic recipe for Pimento Cheese, that I will be using to make grilled cheese sandwiches this weekend.
Actually I will be having a little ladies get together.
I will be putting together a grilled cheese buffet!  Fun right?!!

Here is what you need:

8oz of softened cream cheese
1 cup of grated sharp cheddar cheese
1 cup of grated Montery Jack cheese
2 1/2 tablespoons chopped pimentos
1/4 cup of mayo
1/4 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon garlic salt



Super simple - using a mixer, mix all ingredients well for approximately 3-4 minutes

Chill and serve
