Jalapeno Poppers


I have quite a few popper recipes on the blog, but I still managed to come up with a new one!
Late one night this week the husband wanted a few Sam Club jalapeno poppers, I said you're out of luck we are fresh out.
So today I was going to  pick up some poppers from Sam's club, I thought why would I do that when I have 20 some pepper plants growing in the garden ?!
So that is what I did today made to freeze jalapeno poppers.  I should have been doing this all summer.  Well there is always next year!
Alright let's get to it!

Here is what you're going to need:
20 jalapeno peppers
1 and a half bricks of cream cheese, softened
1 block sharp cheddar cheese, that equals about 1 1/2 cups once shredded
1 tsp onion powder
1tsp cayenne powder
1/4 tsp cajun seasoning
1 generous dash of pepper
*Topping
1 cup panko bread crumbs
2 Tablespoons butter
4 garlic cloves


How to make them:
Preheat your oven to 350 degrees
You're going to want to have your cream cheese softened ahead of time
Shred your block of cheese (it's way better than the pre shredded cheese)
Now mix your cream cheese and cheese together until well blended
Add in your seasonings, mix well.  Set aside.

But your gloves on and get those jalapenos sliced!
Cut off the stem, cut the pepper down the middle and scoop out the seeds and veins.

Now get to stuffing!  Using a butter knife fill your jalapenos, no need to mound the cheese, just make it level with the top of the pepper.

On to the topping, warm a pan on your stove top add the 2 Tablespoons of butter until melted then add the garlic, and cook for 2 minutes.
Next add your bread crumbs, constantly stirring cook for 4 minutes.

Take your cheese filled jalapenos press them firmly into the panko bread crumbs.



Place them face up on a baking sheet and cook for 15 minutes.

*now I skipped the cooking part for now and placed them on a baking sheet and put into the freezer for 30 minutes, then popped them into a freezer bag until we are ready to eat them.
Great thing to have on hand for company that might stop by or a Football Party Munchie!!
