My site is packed full of delicious stuff yo face carbs, I mean come on we only live once right!
Just even it out with some veggies and fruits, do a little exercise.
Ok maybe don't take my advice :)
Hey this bread has spinach that's a vegetable!
But seriously this Cheesey Stuffed Spinach Bread is really good.
Here is what you need:
1 loaf french bread
1 Tablespoon Olive Oil
1 box, 10oz frozen spinach, thawed and drained
1/2 white onion, diced
1/2 red bell pepper, diced
3 cloves garlic, chopped
2 Tablespoons pesto, you can use store bought. I had some frozen that I made this summer here is that recipe Garlic Scape Pesto.
1/2 Teaspoon Worcestershire (don't grab the soy like I did the other day!)
1/4 Teaspoon salt
1/4 Teaspoon pepper
1/2 Teaspoon Paprika
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup grated parmesan
1/2 cup sharp cheddar cheese, shredded
1/2 cup mozzarella, shredded
How to make it:
Preheat your oven to 350 degrees
Cut a lid off your bread, cut about half way through, save that bread you can use it to dip into the spinach mixture or do like me and make some homemade croutons with it.
Heat the olive oil, add onions, cook about 10 minutes on medium heat, add peppers cook a few minutes add garlic cook a few more minutes.
Add in your seasonings, worcestershire and sour cream.
Next melt in your cream cheese, once that is incorporated well, mix in the cheese.
I'm getting a lot of use out of my new spoon!
After everything is warmed through and mixed, spoon the cheesey goodness into your bread "boats".
I used one of the real long french breads, I ended up cutting that in half to place onto a baking sheet.
Fill to the top, and sprinkle with the shredded mozzarella.
Bake at 350 for 25 minutes
Let it rest a few minutes before you slice it.
Be Careful it is piping hot!
