I love making fresh pesto in the summer, I rarely buy it - only garden fresh for me!
You can make this in the summer and then freeze it, use throughout the year!
Do you just love this fun platter my daughter gave me?! Makes me laugh, yes it's true, I am over camping. Maybe glamping is more my style?!
Now don't get me wrong I love the outdoors and all the great activities, I just don't want to sleep in a tent.
This pesto is made with garlic scapes, garlic scapes are new to me within the last few years. Garlic scape is what grows out of the top of garlic bulbs, go figure!
They are really cool looking, all twistey! I have never seen them in the grocery, I pick them up at any of the farmers markets around me. I can get 2 bunches for $5.
Now the basil, I grow myself, this year I have a whole raise bed in my garden dedicated to all herbs. Also a few pots on our back patio.
Ok here we go, it's super easy to make and very delicious!
25 Basil leaves
5 garlic scapes, chopped
1/2 Cup Almonds, or you can use pine nuts or walnuts
1/2 Parmesan cheese, I used shaved (but use what you have on hand)
1/2 Cup olive oil
Salt and pepper to taste
How to make it:
Easy!
Make sure to wash your basil and dry it, add basil, chopped garlic scapes and nuts to a food processor. Get that well mixed.
And in cheese, salt, pepper and finally add in olive oil, add more or less depending on your consistency preference.
So many ways to use pesto, pasta, salads, pizza or just on bread!
I have a wonderful appetizer recipe using pesto - SO easy you can read that here Goat Cheese Bruschetta Bites.
Hope you enjoy!
